Recipe 1: Pea and Mint Soup

Utensils:

Saucepan
Blender

Ingredients:

500g fresh or frozen peas
1 onion, chopped
2 tbsp olive oil
500ml vegetable stock
2 tbsp fresh mint, chopped
Salt and pepper to taste

Instructions:

Heat olive oil in a saucepan and sauté the onion until soft.
Add the peas and vegetable stock and bring to a boil.
Simmer for 10 minutes, then blend until smooth.
Stir in the chopped mint and season with salt and pepper before serving.

Ingredients:

500g fresh or frozen peas
2 tbsp butter
Zest of 1 lemon
Salt and pepper to taste

Instructions:

Cook the peas in boiling salted water for 5 minutes. Drain.
Melt the butter in a saucepan and stir in the lemon zest.
Toss the peas in the lemon butter and season with salt and pepper before serving.
