1 onion squash, halved and sliced
2 tbsp olive oil
1 tbsp honey

1 onion squash, halved and seeds removed
1/2 cup quinoa
1/4 cup feta cheese, crumbled
1/4 cup dried cranberries
2 tbsp olive oil
Salt and pepper to taste
Instructions:
Preheat the oven to 180°C.
Cook the quinoa in a saucepan according to package instructions.
Drizzle the onion squash halves with olive oil, season with salt and pepper, and bake for 30-35 minutes until tender.
Once cooked, mix the quinoa with feta cheese and dried cranberries, then stuff the squash halves with the mixture.
Return to the oven for 10 minutes, then serve hot.
