Ingredients:
1 bunch green kale, chopped
1 cup green lentils
1 onion, diced
2 carrots, chopped
4 cups vegetable stock
1 tbsp olive oil
Salt and pepper to taste
Instructions:
Heat olive oil in a large pot and sauté the onion and carrots until softened.
Add the green lentils and vegetable stock. Bring to a boil, then reduce heat and simmer for 20 minutes.

Ingredients:
1 bunch green kale, stems removed
1/4 cup walnuts
1 clove garlic
1/2 cup olive oil
1/4 cup grated Parmesan
Salt and pepper to taste
400g pasta of choice
Instructions:
Cook the pasta according to package instructions.
In a blender or food processor, combine the kale, walnuts, garlic, and Parmesan. Blend until finely chopped.
With the blender running, slowly drizzle in the olive oil until smooth.
Toss the cooked pasta with the kale pesto and season with salt and pepper.
