Ingredients:
4 flat mushrooms
2 tbsp balsamic vinegar
1 tbsp olive oil
1 clove garlic, minced
Salt and pepper to taste
Fresh thyme for garnish
Instructions:
Preheat the grill or griddle pan over medium-high heat.
In a small bowl, mix balsamic vinegar, olive oil, garlic, salt, and pepper.
Brush the mushrooms with the balsamic mixture.
Grill the mushrooms for 5-7 minutes on each side until tender and charred.
Garnish with fresh thyme and serve.
Recipe 2: Flat Mushroom and Goat Cheese Tart

Ingredients:
4 flat mushrooms, sliced
1 sheet puff pastry
100g goat cheese
1 onion, thinly sliced
2 tbsp olive oil
1 egg, beaten
Salt and pepper to taste

Instructions:
Preheat the oven to 180°C.
Roll out the puff pastry and place on a baking tray. Score a 1cm border around the edges.
Heat olive oil in a pan and sauté the onion until caramelised.
Spread the caramelised onion over the puff pastry, top with sliced flat mushrooms, and dollops of goat cheese.
Brush the edges of the pastry with beaten egg, season with salt and pepper, and bake for 20-25 minutes until golden and puffed.
