Using mature, local, rare breed pigs, former chef Ben Dulley and his team create a stunning range of cured meats that are routinely considered the best in the country. They believe that using traditional methods and no commercial shortcuts is what sets their products apart and, importantly, this starts with a whole animal butchery approach.
