Recipe 1: Grilled Green Courgette with Lemon and Herbs

Utensils:

Grill pan or barbecue
Mixing bowl

Ingredients:

2 green courgettes, sliced lengthwise
2 tbsp olive oil
Juice of 1 lemon
1 tsp mixed herbs (thyme, oregano)
Salt and pepper to taste

Instructions:

In a mixing bowl, toss courgette slices with olive oil, lemon juice, and herbs.
Grill for 2-3 minutes on each side until charred.
Season with salt and pepper, and serve warm.

Recipe 2: Courgette Noodles with Pesto

Utensils:

Spiralizer or julienne peeler
Frying pan

Ingredients:

2 green courgettes, spiralized into noodles
2 tbsp basil pesto
1 tbsp olive oil
Salt and pepper to taste

Instructions:

Heat olive oil in a frying pan and sauté the courgette noodles for 2-3 minutes.
Add basil pesto and toss until the noodles are evenly coated.
Season with salt and pepper, and serve as a light main dish.
