Add the sliced ginger and simmer for 10 minutes.
Strain the tea into cups and sweeten with honey or lemon as desired.

Ingredients:
500g carrots, peeled and sliced
2 tbsp olive oil
1 tbsp honey
1-inch piece fresh ginger, grated
Salt and pepper to taste
Instructions:
Preheat the oven to 200°C.
In a mixing bowl, toss the carrots with olive oil, honey, and grated ginger.
Spread on a baking tray and roast for 25-30 minutes until tender and caramelised.
